One Pot Chicken Jambalaya

Bring "New Awlins" home with this Big Easy recipe (emphasis on "easy").
- 2 teaspoons of vegetable oil
- 2 boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 bratwurst-sized turkey sausages, cut into 1-inch pieces
- 4 celery stalks, diced
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 1 medium green bell pepper, diced
- ¼ teaspoon paprika
- ¼ teaspoon dried basil
- A pinch of cayenne pepper
- Salt and pepper to taste
- 2 cups uncooked white rice
- 4 cups chicken broth
- 1 bay leaf
Heat the oil in a large pot over medium-high heat.
Add the chicken and sausage and sauté until the chicken is browned, about 5 minutes.
Add the celery, onion, garlic and green pepper.
Sauté for 5 more minutes, until the vegetables are soft.
Add the spices and salt and pepper to taste.
Stir in the uncooked rice, the chicken broth and the bay leaf.
Cook covered on medium-high heat for 20 minutes, until the chicken is cooked through and the liquid has evaporated. If there is liquid left, simmer uncovered for an additional 3 minutes.
Remove the bay leaf and serve in shallow bowls.

- Add either more or less of the cayenne pepper, depending on how hot you and your kids can handle it.
