Authentic Enchiladas

Flavor explosion and fun for the kids to help with.
- Corn tortillas
- Large can of chili
- 1 egg
- Shredded cheese
- Ground beef, browned
First, heat a pan with 2 tbsp of vegetable oil. Place a corn tortilla in pan for 8 seconds on each side. Blot dry with paper towel. Set aside. Repeat with all the tortillas.
Heat up the chili and brown the ground beef, then drain. Salt and pepper to taste.
Now for the kids help: Plate one tortilla, add 3 tbsp of chili, 2 tbsp of ground beef, handful of cheese, layer another tortilla, another handful of cheese and microwave for 30 seconds to melt.
Now, fry egg, over-medium. Place the egg on top of the enchilada, cut into bite-size chunks and enjoy!

- You can make everything earlier, except for the egg so everyone can eat together.
