Blossom Nachos

Old school nachos are great. Nachos with fiber-rich beans and cut into flower shapes are EVEN BETTER!

  • 6 whole wheat or flour tortillas
  • 12 presliced squares American cheese
  • 1 small can refried black beans
  • 6 green olives with pimientos, cut in half
  • 1
    Preheat oven to 350 degrees F.

    Line a cookie sheet with foil and lightly spray with nonstick cooking spray; set aside.

    Using a flour-shaped cookie cutter, cut 2 flowers from each tortilla. Place on prepared pan and spray top of each cutout lightly with nonstick cooking spray. Bake for 5 to 7 minutes. Carefully remove pan from oven and cool for 5 minutes.

    Cut each slice of cheese into a flour shape with the cookie cutter; set aside.

    Spread about ½ teaspoon refried black beans onto each baked tortilla. Top each on with a flower-shaped cheese slice, and place an olive in the center of each.

    Return pan to oven and bake for 5 to 7 minutes or until cheese begins to melt. Carefully remove from oven and serve immediately.
