- Zucchini, cut in thin sticks, sauteed
- Broccoli florets, lightly steamed
- Chicken apple sausage, cut in rounds and sauteed
- Ground turkey, beef or a mixture, sauteed and crumbled
- Cooked quinoa or brown rice
- Refried beans, organic from a can, warmed
- Green or black olives, sliced
- Avocado, sliced
- Shredded lettuce
- Cheddar or pepper jack cheese, shredded
- Green apples, shredded, raw
- Red or green salsa
- Diced fresh tomato
- Cilantro leaves, torn from the stems
- Lime wedges
- Plain yogurt
