Veggie-Packed Muffins

Muffins so good, the kids won't even realize they're eating veggies!
- 1 c. flour
- 1/2 c. sugar
- 2 tsp. baking powder
- 1 tbsp. melted butter/margerine
- 1 egg
- 1/2 c. milk
- 1/2 tsp salt
- 1 tsp vanilla
- 3/4 c. grated zucchini (or substitute another veggie that can be easily shredded.)
In large bowl, combine flour, sugar, baking powder, and salt. Mix together with wisk or fork.
In medium bowl, wisk together egg, and milk.
To large bowl, add melted butter and the egg/milk mixture and wisk together until all of the dry ingredients are blended together.
Stir in grated zucchini.
Using 3/4 measuring cup, scoop into greased muffin tins or baking cups. (Do not fill to the top.)
Bake at 375 degrees for 20-25 min. (checking after 20 min by inserting a tooth pic in center of muffin. Leave in for a few more min if you like them a little browner on top)
When done, take out of the muffin tins and cool on wire rack. Store in air tight containers.

- Zucchini was the first veggie I tried. After my 4 yr old gobbled them up, I decided to try other veggies. Carrots and sweet potatoes are great also. (You can even thow in bananna's and nutts instead for quick bananna muffins.)
