Muffins so good, the kids won't even realize they're eating veggies!

  • 1 c. flour
  • 1/2 c. sugar
  • 2 tsp. baking powder
  • 1 tbsp. melted butter/margerine
  • 1 egg
  • 1/2 c. milk
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 3/4 c. grated zucchini (or substitute another veggie that can be easily shredded.)
  • 1
In large bowl, combine flour, sugar, baking powder, and salt. Mix together with wisk or fork.
  • 2
In medium bowl, wisk together egg, and milk.
  • 3
To large bowl, add melted butter and the egg/milk mixture and wisk together until all of the dry ingredients are blended together.
  • 4
    Stir in grated zucchini.
  • 5
Using 3/4 measuring cup, scoop into greased muffin tins or baking cups. (Do not fill to the top.)
  • 6
Bake at 375 degrees for 20-25 min. (checking after 20 min by inserting a tooth pic in center of muffin. Leave in for a few more min if you like them a little browner on top)
  • 7
When done, take out of the muffin tins and cool on wire rack. Store in air tight containers.
  • Zucchini was the first veggie I tried. After my 4 yr old gobbled them up, I decided to try other veggies. Carrots and sweet potatoes are great also. (You can even thow in bananna's and nutts instead for quick bananna muffins.)
