Vodka Penne Pasta (Don't worry the alcohol cooks out)

Yummy Tomato cream sauce...bad for the waistline :)
- 3 chicken breasts
- 1 lb penne pasta
- Butter (not margarine PLEASE)
- 1 cup heavy cream
- 1 cup tomato sauce
- Medium onion, diced
- 2 cloves fresh garlic-minced
- ¼ cup of chicken broth (low sodium)
- 2 tbsp Vodka
- Basil (6-7 leaves or 1-2 tablespoon dry to taste)
- Parsley (1 tablespoon fresh or dry)
- Olive Oil
- Kosher or sea salt
- Black pepper
Heat a tablespoon of butter and a tablespoon of olive oil in your pan and cook chicken.
Put water for pasta on to boil. (follow package directions)
Move chicken from the pan and cut into bite sized chunks.
Once water is boiling throw the pasta in the pot. (Cook until al dente)
Heat 2 tablespoons of butter and 2 tablespoons of olive oil in the pan.
Throw garlic and onion into the pan and stir to coat with the butter/oil.
Pour the chicken broth and vodka on top of the garlic and onion, let simmer until it is not so soupy (reduced by half).
Pour tomato sauce in the pan and stir until combined.
Pour heavy cream on top and stir again.
Add the herbs, salt and pepper to taste.
Turn your stove down to low and stir the chicken into the sauce.
Drain the pasta and pour into large bowl, pour sauce over the pasta and mix it so its evenly coated.

- If you don't have any vodka then you can use ¾ cup of chicken broth, just be careful to not over salt later.
