Yummy Tomato cream sauce...bad for the waistline :)

  • 3 chicken breasts
  • 1 lb penne pasta
  • Butter (not margarine PLEASE)
  • 1 cup heavy cream
  • 1 cup tomato sauce
  • Medium onion, diced
  • 2 cloves fresh garlic-minced
  • ¼ cup of chicken broth (low sodium)
  • 2 tbsp Vodka
  • Basil (6-7 leaves or 1-2 tablespoon dry to taste)
  • Parsley (1 tablespoon fresh or dry)
  • Olive Oil
  • Kosher or sea salt
  • Black pepper
  • 1
Heat a tablespoon of butter and a tablespoon of olive oil in your pan and cook chicken.
  • 2
Put water for pasta on to boil. (follow package directions)
  • 3
Move chicken from the pan and cut into bite sized chunks.
  • 4
Once water is boiling throw the pasta in the pot. (Cook until al dente)
  • 5
Heat 2 tablespoons of butter and 2 tablespoons of olive oil in the pan.
  • 6
Throw garlic and onion into the pan and stir to coat with the butter/oil.
  • 7
Pour the chicken broth and vodka on top of the garlic and onion, let simmer until it is not so soupy (reduced by half).
  • 8
Pour tomato sauce in the pan and stir until combined.
  • 9
Pour heavy cream on top and stir again.
  • 10
Add the herbs, salt and pepper to taste.
  • 11
Turn your stove down to low and stir the chicken into the sauce.
  • 12
Drain the pasta and pour into large bowl, pour sauce over the pasta and mix it so its evenly coated.
  • If you don't have any vodka then you can use ¾ cup of chicken broth, just be careful to not over salt later.
