British Shrimp Potatoes

Submitted by TheAunt

Once served as a "meatless Friday" dish, this ultra-simple, nutritious meal is delicious and easy to make and very filling.

  • 4 baking potatoes.
  • About 2 pounds of precooked small or salad-sized shrimp, pealed and precooked
  • Mayonnaise (to taste).
  • Dill weed (to taste).
  • Salt and pepper (to taste).
  • 1
Clean and pierce potatoes and put them in microwave like wheel-spokes.
  • 2
Cook on high for about 10 minutes: turn potatoes and cook for another 10 min.
  • 3
Potatoes cook at different rates, so some may take longer than 20 min. total. Cook until they are soft to the touch.
  • 4
Remove potatoes from microwave and let sit for about 10 minutes to finish cooking.
  • 5
Slice open potatoes and mash up the flesh. Add mayonnaise, shrimp, and dill (to taste).
  • 6
Mix all ingredients together, adding mayo and dill to taste. Salt and pepper if desired.
  • 7
Serve at once in the shell.
  • To "lighten up" this recipe, use low-fat or light mayonnaise. And don't forget to each the skin: it's loaded with nutrients!
