British Shrimp Potatoes

Once served as a "meatless Friday" dish, this ultra-simple, nutritious meal is delicious and easy to make and very filling.
- 4 baking potatoes.
- About 2 pounds of precooked small or salad-sized shrimp, pealed and precooked
- Mayonnaise (to taste).
- Dill weed (to taste).
- Salt and pepper (to taste).
Clean and pierce potatoes and put them in microwave like wheel-spokes.
Cook on high for about 10 minutes: turn potatoes and cook for another 10 min.
Potatoes cook at different rates, so some may take longer than 20 min. total. Cook until they are soft to the touch.
Remove potatoes from microwave and let sit for about 10 minutes to finish cooking.
Slice open potatoes and mash up the flesh. Add mayonnaise, shrimp, and dill (to taste).
Mix all ingredients together, adding mayo and dill to taste. Salt and pepper if desired.
Serve at once in the shell.

- To "lighten up" this recipe, use low-fat or light mayonnaise. And don't forget to each the skin: it's loaded with nutrients!
