Kids Love It Carrot Souffle

This souffle is sweet and creamy, with a pinch of fresh ground nutmeg - a favorite even for those who thought they didn't like carrots!
- ½ cup sugar
- 2 lb carrots, peeled
- 2 tbsp flour
- ½ tsp baking powder
- 1 tsp ground cardamom
- ½ tsp nutmeg, grated or ground
- 4 tbsp butter (½ stick)
- 1 egg
- 1 tsp vanilla extract
Preheat the oven to 350 degrees.
In a large pot, put the carrots and enough water to cover them with one inch of water.
Bring to a boil.
Cook until the carrots are completely tender (about 45 minutes), so they are breaking up.
When the carrots are cooked, drain them and put in a mixing bowl with all other ingredients.
Mix with an electric beater until all ingredients are combined.
Pour into a casserole or souffle dish.
Bake for 30 minutes or until the top is lightly browned.

- For the best flavor, purchase whole cardamom and grind it yourself and whole nutmeg and grate it yourself(a microplane works great for grating).
