Kids Love It Carrot Souffle

This souffle is sweet and creamy, with a pinch of fresh ground nutmeg - a favorite even for those who thought they didn't like carrots!

  • ½ cup sugar
  • 2 lb carrots, peeled
  • 2 tbsp flour
  • ½ tsp baking powder
  • 1 tsp ground cardamom
  • ½ tsp nutmeg, grated or ground
  • 4 tbsp butter (½ stick)
  • 1 egg
  • 1 tsp vanilla extract

    Preheat the oven to 350 degrees.

    In a large pot, put the carrots and enough water to cover them with one inch of water.

    Bring to a boil.

    Cook until the carrots are completely tender (about 45 minutes), so they are breaking up.

    When the carrots are cooked, drain them and put in a mixing bowl with all other ingredients.

    Mix with an electric beater until all ingredients are combined.

    Pour into a casserole or souffle dish.

    Bake for 30 minutes or until the top is lightly browned.
  • For the best flavor, purchase whole cardamom and grind it yourself and whole nutmeg and grate it yourself(a microplane works great for grating).
