Cheesy Corn Casserole

<!-- -->

Do your kids think you're cheesy or corny? Either way, you can live up to your reputation at dinnertime with this dish.

  • 1 stick butter or margarine (¼ lb.)
  • 1 (8-oz) package cream cheese
  • ¼ cup of milk
  • 1 (2-lb) bag frozen corn, cooked per package directions
  • 1 cup finely chopped veggies such as summer squash or zucchini (optional)
  • Garlic salt
  • Salt and pepper
  • 1 cup of shredded cheddar or Monterey jack cheese
  • 1
    Preheat oven to 350 degrees.
  • 2
Melt butter or margarine, cream cheese, and milk together in a small saucepan over medium heat until smooth and uniform. Or you can do this in the microwave (about five minutes on 50% power, stir, and two more minutes at 50% if necessary).
  • 3
Place corn in a large, 9" x 13" casserole dish. Pour cream cheese mixture over the top. Season to taste with garlic salt, salt, and pepper. Gently stir all ingredients together in the casserole until just blended.
  • 4
    Top with shredded cheese.
  • 5
Bake in oven until hot throughout and bubbly (about 25 minutes).
