Ratatouille

Make it a Ratatouille night with the fabulous Disney movie and this yummy dish. Serve as a side, a sauce over chicken, or a vegetarian meal by itself.

  • 3 tbsp olive oil
  • 1 onion, thinly sliced
  • 1 red bell pepper, cubed
  • 1 small eggplant OR 2 yellow squash, cubed
  • 1 zuncchini, cubed
  • 3 cloves garlic, minced
  • 1 cup crushed tomato
  • Splash of wine vinegar (or white wine)
  • ½ cup plus 2 tbsp fresh basil leaves thinly sliced
  • Salt & Pepper
  • Parmesan cheese

    In large pan: Heat oil over med-high heat.

    Add onion & bell pepper.
  • 3
    Cook until onion is translucent (about 5 minutes)

    Add eggplant or squash, zucchini, garlic, salt & pepper (to taste.)

    Cook COVERED med to med-low for 15 minutes. Stir occasionally.

    Add vinegar or wine and 1/2 cup basil.

    Add crushed tomatoes and simmer, COVERED. Continue stirring occasionally for about 10 minutes (until veggies are tender).
  • 8
    Top with remaining basil and desired amount of Parmesan and serve.
  • I serve this as a side with grilled chicken.
