Ratatouille

Make it a Ratatouille night with the fabulous Disney movie and this yummy dish. Serve as a side, a sauce over chicken, or a vegetarian meal by itself.
- 3 tbsp olive oil
- 1 onion, thinly sliced
- 1 red bell pepper, cubed
- 1 small eggplant OR 2 yellow squash, cubed
- 1 zuncchini, cubed
- 3 cloves garlic, minced
- 1 cup crushed tomato
- Splash of wine vinegar (or white wine)
- ½ cup plus 2 tbsp fresh basil leaves thinly sliced
- Salt & Pepper
- Parmesan cheese
In large pan: Heat oil over med-high heat.
Add onion & bell pepper.
Cook until onion is translucent (about 5 minutes)
Add eggplant or squash, zucchini, garlic, salt & pepper (to taste.)
Cook COVERED med to med-low for 15 minutes. Stir occasionally.
Add vinegar or wine and 1/2 cup basil.
Add crushed tomatoes and simmer, COVERED. Continue stirring occasionally for about 10 minutes (until veggies are tender).
Top with remaining basil and desired amount of Parmesan and serve.

- I serve this as a side with grilled chicken.
