Savory Potatoes

This delicious dish makes ordinary potatoes look pretty plain.
- Non-stick cooking spray
- 5 cups small red potatoes, diced
- 1 can (14½-oz) diced tomatoes
- 1 leek, washed & sliced, separated into rings
- 3 garlic cloves, minced
- ½ tsp dried thyme
- ¼ tsp dried oregano
- ¼ tsp each salt and ground black pepper
- 1 can (14-oz) beef broth
- 3 tbsp butter, cut into 6 pieces
Heat the oven to 450 degrees .
Lightly grease a 13 x 9-inch baking dish with cooking spray.
Add the potatoes, tomatoes and leeks. Sprinkle with garlic, thyme, oregano, salt and pepper.
Pour the beef broth over the vegetables and toss gently to mix.
Scatter the butter pieces over top.
Bake uncovered, for about 50 minutes or until potatoes are tender. Serve immediately.

- This is a great side dish to accompany Roast Chicken Provence or Grapefruit Thyme Roasted Chicken.
