Albondigas (Meatballs) Soup

Albondigas is a traditional soup from my mom's hometown that will amaze your taste buds. mmmmm.

  • ground beef or turkey
  • salt
  • eggs
  • rice
  • tomatoes
  • fresh oregano
  • onion
  • carrots
  • potatoes
  • zucchini
  • carrots
  • garlic
  • water
  • 1
    Put one gallon of water to boil. In a mixing bowl add 2lb of ground beef or turkey, add half a cup of rice 2 eggs, half tomato diced and half onion diced, mix all together add one tablespoon of salt and one tablespoon of fresh oregano one tablespoon of garlic.

    Peel 2 carrots and 2 potatoes. Cut 2 zuccini into a big dice. Add vegetables to boiling water. Also add one tablespoon of salt, garlic and fresh oregano to water.

    Boil veggies in water for about 10 minutes. Next, form one inch meatballs out of the meat mixture and add to boiling water. Also, add half an onion diced, half a tomato diced into soup. Let boil for about 20 minutes. Check center of a meatball and if cooked through, the soup is ready to eat. Serve with rice. Enjoy!
