Chocolate Crinkleys

They look much more complex then they are. Easy, yummy and look great on a plate. Little one can help put it together, take a break while it chills then help prep them to go into the oven.
- 1/2 cup vegatable oil
- 2 cups granulated sugar
- 4 ounce unsweetend chocolate, melted
- 2 teaspoons vanilla
- 4 eggs
- 2 cups flour
- 2 teaspoons baking powder
- Powdered sugar - for rolling
Cream oil, sugar, chocolate and vanilla in a large bowl. Will look grainy and wet.
Stir in eggs one at a time.
Mix flour and baking powder together in separate bowl.
Add flour mixture to creamed ingredients. Mix well to combine.
Cover and refrigerate for 3 hours at least.
Preheat oven to 350, grease or spray cookie sheet.
Scoop and ball teaspoon of dough.
Roll dough in powdered sugar and place on cookie sheet.
Bake 9-12 minutes. Until cookie rebounds to a light touch.
Remove from cookie sheet and cook on wire rack.

- These are very simple and great for helping a little one learn to count. Lots of 2's and 4's.
- Use a regular (not a non-stick) cookie sheet if you have it. If you use a darker pan, try less time. The powdered sugar can burn on the outside.
- These will be pretty gooey looking when done baking. That is how they should be. If you over bake they dry out horribly and are not worth a darn.
- Be careful when you try and eat one on the sly...that powdered sugar can get everywhere.
