Quinoa Salad

This healthy and protein-filled salad is one of my favorite summer side dishes.
- 1 box Quinoa (10 oz.)
- 1 red bell pepper-- chopped
- 4 green onions-- sliced
- 1 carrot-- chopped
- 2 stalks celery -- chopped
- 4 tbsp. olive oil
- 4 tbsp. balsamic vinegar
- 1/4 cup fresh basil -- chopped
- salt and pepper to taste
Cook quinoa according to the package directions. Rinse and chill.
Add other ingredients, stir.
Add salt and pepper to taste.

- Add feta for a little extra touch.
