Quinoa Salad

This healthy and protein-filled salad is one of my favorite summer side dishes.

  • 1 box Quinoa (10 oz.)
  • 1 red bell pepper-- chopped
  • 4 green onions-- sliced
  • 1 carrot-- chopped
  • 2 stalks celery -- chopped
  • 4 tbsp. olive oil
  • 4 tbsp. balsamic vinegar
  • 1/4 cup fresh basil -- chopped
  • salt and pepper to taste

    Cook quinoa according to the package directions. Rinse and chill.
  • 2
    Add other ingredients, stir.
  • 3
    Add salt and pepper to taste.
  • Add feta for a little extra touch.
