Thanks, Everyone! I came across a recipe for Carmelitas. Think I'm going to give those a try. Early morning grocery shopping for me. :( So much for sleeping in. Oh well... Hope you all have a wonderful Mother's Day!!

If you try the cream roll, do NOT roll the cake up very tightly. I did this with the last one and I made kind of a taco with it because it wouldn't roll up right haha.

I made this (opens in new window) for Easter and it was a big hit. It is delicious and very light. I did mine with strawberries. The hardest part is rolling up the hot cake. I didn't even use the paper to line the pan either. Just used a buttload of nonstick spray in my casserole dish and it fell right out.

I saw one easy thing that I want to try on Pinterest. You just get a Sarah Lee pound cake and cut it in half lengthwise. Make some vanilla pudding and put between the pieces of cake. Top with a chocolate glaze and viola. Chocolate eclair cake!

I also have a recipe for eggnog cookies that are to die for, but I don't know if you can find eggnog this time of year.
