Leftovers
Just curious: How often do you have leftovers for dinner?
With most of the meals I make, I cook enough that we can have it for dinner for 2-3 nights. Sometimes I make a double batch and freeze half, or do something different with the leftovers the next night (e.g. use leftover chicken to make chicken quesadillas). I'm lucky DH and the boys don't mind leftovers at all and it means I only have to actually cook 3-4 meals a week and the other nights it's more just heating up leftovers. :)

I also tend to cook with the intent of having leftovers. I'll roast a chicken and use part for chicken and noodles, and then shred and bbq the rest for sandwiches that can be easily heated. If I make soup or chili, I always make a huge batch. I may freeze some of it, but there's still plenty in the fridge to last a few days for lunch or supper. I'll make 2 pans of lasagna so I can freeze one for later, and each pan will yeild at least 2 meals for all of us.
I agree that a lot of things do taste better a couple of days later, esp soup! It sits and the flavors really get a chance to meld together. Probably half the meals I cook yield leftovers, and we do eat them! If my husband refused to eat them, he'd go hungry and I wouldn't care!

My husband won't eat any leftovers. I really don't mind them, but he wants all of his food to be fresh out of the oven. I don't mind though, he cooks three nights of the week. If I cooked every single night then he'd have to get over his hatred of leftovers.

Between 1 and 3 times per week. I love leftovers! For the most part I think they taste better then next day!

We don't ever have left overs, which is good because my family won't eat them. If by chance we do actually have them (which is rare) My mum will feed them to the boys for lunch, but for something to eat at tea? No way. When we have my step daughter, bless her and her metabolism, she'll eat what ever is in the house. Yet she's still skinny! To be 13 again, haha.

my snob husband wont eat left overs, at all so i try to have as little as possible, but there are some meals that you just cant perfectly portion for three. sometimes i try to plan so i have left overs to feed Gigi when we're having something she doesnt eat. that's about once a week.

We usually have leftover night once a week. A lot of times I will double a recipe so I can freeze the other half, but I usually plan for that. Leftover night are the meals that I didn't plan to have extra :)

I love cooking, but I'm a university student with a part-time job and so is my boyfriend so usually we eat leftovers a lot, if not leftovers it's a crockpot meal. I cook a few meals on the weekend and freeze/refridgerate it until needed later in the week.

The only time we have leftovers is after breakfast when I usually will eat whatever is left of the mushrooms and sausage for lunch. Sometimes after a Sunday Roast we have enough left over for a sarnie for the next day. For dinner I make meat and veggies every night and that is really only good fresh, and my husband would complain if I re warmed it.
