Cooking Tips: Salvage Your Overcooked Veggies

You've planned a menu, brought your groceries home and whipped up a tasty healthy meal for your family. But between helping your third-grader with a science project and cleaning up the box of cereal your toddler dumped on the floor, the steamed broccoli has gone from tender-crisp to mush. What's a parent to do to salvage these overcooked vegetables from the inedible beyond? Some quick thinking and a few cooking tips can keep your overdone veggies on their way to your kiddos tummies rather than to the garbage pail.
Go for au gratin. Before you throw away that mushy broccoli, try mixing in a little half-and-half, some melted butter and some grated cheese. Throw it in a casserole, sprinkle on some breadcrumbs. Your family will think you're fancy and everyone will get a little taste of French culture!
Make it soup-er. Add some chicken or vegetable stock to your overcooked veggies and puree them in a blender to make soup. Reserve some of the veggies from the puree and dice them up to give your soup some texture. Add a bit of cream or milk and herbs like thyme, dill, or chives, and, with this clever cooking tip, your salvage job will seem more like a master plan.
Mix it in. Cut the overcooked veggies into smaller pieces and mix them into pasta, rice, or couscous for a pilaf. If they are really mushy, whip them up with boiled potatoes for a colorful and nutritious twist on a favorite comfort food.
