Marinated Filet Mignon

So what if you're a steak-and-potatoes eater? Now's the time to be! And while marinating your steak in lemon soda may sound strange, you should do it because it makes steak amazingly tender!
- 2 filet mignon steaks, all fat and shiny membrane removed
- 1 cup Hansen's lemon-lime soda
- ¼ cup Worcestershire sauce
- 3 tbsp soy sauce
- 1 large garlic clove, minced
- 1 tsp fresh ginger, minced
- 2 tsp canola oil (if using cast-iron skillet)
- Salt and pepper to taste
Combine all ingredients except salt and pepper in a resealable plastic bag; add steaks and refrigerate for at least 3 hours, turning bag several times.
Preheat a cast iron skillet or nonstick grill pan on medium-high until water "dances" on the surface.
Brush oil on surface of skillet; use cooking spray for nonstick grill pan.
Season meat with salt and pepper, then place on hot skillet.
Sear each side for 2 minutes; reduce heat to medium.
Cook steaks an additional 4 minutes on each side; basting with marinade as they cook.
Remove steaks to a plate, cover with a large bowl, and allow steaks to rest for 15 minutes before serving.

- Serve with a spinach salad drizzled with olive oil and fresh lemon for extra iron.
