Tilapia Mango Tacos

Got a hankering for Taco Bell but worried about giving the little one (and you!) heartburn? These tacos are healthy and tasty, and quick to make, too!
- 1 lb tilapia fish fillets, cut into 2-inch strips
- ½ cup flour
- 2 tsp season salt
- 2 tbsp olive oil
- Corn tortillas
- Mango Salsa:
- 1 small mango, chopped
- 2 tbsp red onion
- ½ fresh jalapeño, deseeded and chopped
- 2 tbsp cilantro, chopped
- Juice of 1 fresh lime
- Toppings:
- Red cabbage
- Avocado slices
In shallow dish, mix flour and salt.
Dip tilapia filets in flour mixture, coating all sides.
Heat oil in skillet over medium-high heat and add fish.
Cook fish about 3 minutes on each side or until outside is lightly brown and fish is flaky.
Heat up corn tortillas in microwave for 20 seconds.
Fill each tortilla with 23 strips of tilapia and mango salsa.

- If you can't take the heat, leave the jalapeños out of the salsa. For pepper-lovers, throw in the whole jalapeño, seeds and all.
