Matzo Brei

It's like French toast and scrambled eggs got married and had delicious babies.

  • 4 matzos
  • 1 cup boiling water
  • 4 eggs, beaten
  • Salt and pepper to taste
  • 3 tablespoons butter

    Break matzos into pieces in a large bowl.

    Pour boiling water over matzo and stir to allow the matzo to absorb some of the water.

    Drain matzo in a strainer and leave in strainer.

    Add eggs, salt and pepper to the bowl and beat gently with a whisk.

    Stir in the matzo to combine.

    Heat butter over medium heat in a large pan.

    Add matzo mixture and fry on one side until bottom is golden brown and crisp.

    Flip matzo and fry the other side.

    Use a spatula to break the matzo brei into pieces as you fry the second side.

    Remove from heat and serve immediately.
  • Make it savory! Add garlic, chopped onions and parsley to your matzo brei mixture.
  • Make it sweet! Stir in 4 teaspoons of brown sugar and ½ teaspoon of cinnamon and serve with maple syrup or jam for breakfast.
