Oatmeal Molasses Cookies

As desserts go, this one isn't bad if you're watching your middle. If you're a batter-licker, have a nibble before you put in the raw egg. After that, you'll just have to wait the 10 agonizing minutes they take to bake.

  • ½ cup butter, softened
  • ½ cup brown sugar, packed
  • ½ cup granulated sugar
  • ½ cup molasses
  • 1 egg
  • 1 tsp salt
  • 1 ½ tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp ginger
  • 2 cups all-purpose flour
  • 1 cup old-fashioned oats
  • 1 cup raisins

    Heat oven to 350° F.

    Cream butter and sugars in a large mixing bowl until smooth.

    Add molasses and egg and beat well.

    Stir in salt, baking soda, cinnamon and ginger.

    Add flour and oats and stir well.

    Stir in raisins.

    Place spoonfuls on a greased baking sheet and bake for 10 minutes.

    Allow to cool for 1–2 minutes.

    Remove from cookie sheet and cool on cookie rack.
  • Try adding chopped walnuts or pecans for a crunchy and nutritious extra.
